how do I disable email,passwd signin method ???

inside your application remove items inside 'Signin methods'
Signin methods do not contain OAuth2... I think it's always enabled. With the sign-in methods you can allow or disallow "standard password", "Verification Code", "WebAuthn" (see docs) and "LDAP".
You probably want to add some OAuth providers, like Google, Facebook, etc.
